What Makes Kale so Healthy?
Kale is called a superfood because it is high in essential nutrients, fiber, and protein, but low in calories and fat. Specifically Kale is very high in Vitamin A, C and K, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, and Sodium. In fact, Kale even has more calcium per ounce than cow’s milk. With this new found cult following for Kale, it’s only natural that people want to spread the love with their baby.
Is Kale Safe for my Baby?
Like Spinach, Kale can contain relatively high levels of nitrates depending on its growth conditions. For this reason doctors recommend that you don’t serve Kale to your child until he/she is 7-8 months old. When your baby is finally old enough to try Kale, we recommend that you purchase Baby Kale which is naturally sweeter and more tender. You can keep Kale in the fridge for up to 5 days but do try and eat it quickly as it becomes more bitter the longer it is stored.
How do I Serve Kale?
This recipe is a great “starter” recipe for making your own, all natural baby food from kale. Don’t forget that you can also use fresh/frozen kale puree and add it to baby’s food for extra nutrients and vitamins!
- Wash 1 batch of organic kale thoroughly and discard the stems.
- Cook the kale. You can boil in water for 5 minutes or put in the microwave for 7 minutes, stirring halfway through. If boiling reserve about a ½ cup the liquid to puree with in a blender. If microwaving leave the water droplets from washing on. There is no need to add more water.
- Let your fresh kale puree sit and cool. Serve to baby or pour into ice cube trays and save using the ice cube method.
